A Booker and Dax recommended ingredient for recipes that use a Spinzall centrifuge.
Succinic Acid is a flavor enhancer and acdity regulator for acidic beverages. It adds a more complex flavor beyond acidic sourness.
Dave Arnold's usage recommendation:
- Prepare an acid solution: 8g succinic acid into 100g of water (it may need to be slightly warm to help it dissolve).
- Use 10 drops (0.5ml) of the solution for every 100g of juice. For water and juice with less than 10% sugar, liquid measurements can also be in millimeters instead of grams.
- Succinic acid should be used in combination with citric and malic acid. The quantities for those ingredients will depend on the acid content of the starting juice.
