Mono and Diglyceride Flakes (e471) aka Glycerin Flakes do not actually contain glycerin. They are derived from fatty acids (typically vegetable oils) attached to glycerol. They are primary used to emulsify fat molecules with water. They work with to all types of products containing water. Mono and Diglyceride Flakes are also the only product that can foam oils.
