Gellan gum is a type of hydrocolloid created from the microorganism Sphingomonas elodea. It is a water-soluble polysaccharide produced through fermentation. This gelling agent can be used alone or in combination with other starches and hydrocolloids products to produce a wide variety of interesting textures. Blend with Gellan LT100 to reduce brittleness. pH level must be above 4 for gellation.
