What are pH Modifiers?

pH Modifiers are used to regulate the pH balance of food (i.e. make it more acidic or basic). They are commonly used to add tartness to food and beverages and range in sourness from mild (ascorbic and citric acids) to extreme (malic acid). They are also valued for their antioxidant properties, which help to maintain the color of various fruits and vegetables and prevent them from turning brown after being cut.
